Description
Our 2008 Envolve Cabernet Sauvignon expresses the terroir of iconic vineyards in the Sonoma Valley. Each vineyard boasts incredibly rich, volcanic soils that provide unique characteristics to our wines. Fine grained tannins provide this wine with a silky, even texture and mouthfeel. Pair seamlessly with chipoltle seasoned grilled meats, rich pasta dishes or sharp and mild cheeses.
Winemaker Notes
This wine is comprised of 99% Cabernet Sauvignon and 1% Merlot. These are among the very warmest spots in Sonoma Valley, resulting in grapes with complex and fully developed dark fruit flavors. Night harvesting ensures that the fruit comes to the Crush Pad cool, fresh and intact. In the cellar, native yeast fermentation and 21 months in French oak nuance and complexity.

Complex, structured and well balanced, our 2008 Envolve Cabernet has dark berry flavors enhanced by aromas of dark chocolate, coffee, and Vanilla. It offers lush, ripe characteristics- characteristics that you just cannot find in cooler classicregions like Bordeaux. This wine offers a sweet entry, soft silky tannins and great dark fruit characteristics.
