2012 Envolve Lennox Vineyard Pinot Noir
100% Pinot Noir
August 15th, 2013
With aromas of deep plum, cedar and cherry pipe tobacco, this wine is a beautiful representation of its varietal. Perfectly integrated tannins and mouth feel make this a perfect pair with roasted duck, pan fried pork chops and wild rice risotto.
GOLD by LA Wine Competition
Having spent 10 months in French oak (40% new), this unique single vineyard Pinot Noir is a true expression of terroir. Planted to Dijon clones 115, 667, and 777, this family owned nine acre vineyard is located on the southern edge of the Russian River Valley appellation.
Harvested early in the morning to maintain the bright acidity that we look for to compliment its rich and earthy style. We de-stemmed the Pinot berries and co-fermented them in a stainless steel fermenter, where we did a 3-day cold soak before heating the tank. As we began to raise the temperature, we inoculated the must and juice and performed multiple pump-overs to gain texture and a bigger mouth-feel. Once finished, we drained the free run juice and pressed the skins into all French oak, 40% new. We used multiple cooperages to add different layers to the wine. It was aged for 10 months before it was bottled.
