2014 Envolve Sonoma Valley Sauvignon Blanc
Tasting Notes: Better known as our infamous “Patio Pounder,” our 2014 Sauvignon Blanc is crafted in an approachable style, fit for any wine drinker with beautiful aromas of orange zest and pink grapefruit, followed by notes of lemon and lime. Fermented in 100% stainless steel and blended with a touch of Muscat Canelli, this wine is lively on the palate with balanced acidity, and enjoys a harmonious finish.
Vineyard Notes: Our 2014 Sauvignon Blanc comes from the volcanic soils of the Indian Springs Vineyard in Sonoma County, California. Grafted onto Merlot in 2002, this Sauvignon Blanc block is planted on a rocky north facing hillside with intense planting of wild perennial grasses to help the root systems. Vines are cane pruned at 4 tons per acre.
Winemaker Notes: Harvested early in the morning at 5 am to lock in acidity. We whole cluster balloon pressed the fruit, which then settled in a stainless steel tank to allow the sediment to fall to the bottom. Cold fermentation with native yeast at 55 degrees allows the fruit flavors to stay fresh and clean. Before bottling, we added a touch of Muscat Canelli to give the wine a great aromatic quality and beautiful roundness on the palate.
Food Pairing: This Sauvignon Blanc pairs perfectly with seasonal salads, cheese plates, fresh seafood and spicy cuisine.
